Lemon Thyme Roasted Butternut Squash Soup


Have you roasted pumpkins, or squashes before? Most of you must have. There should be a fan club for fall pumpkin lovers. :)

There is so much to love about pumpkins, or in this case the butternut squash. The butternut squash is my absolute favourite. I can hardly wait for the fall knowing how much I love this squash. Its natural sweetness and creaminess always amazes me. It’s like a treat in itself, and so versatile when it comes to meal options.

And if you haven’t already guessed, the butternut squash is my comfort soup in this season. I mean, have you tried making it yourself before? I can almost hear some ‘yes’s,’ but I can hear some ‘no’s’ as well. Do not worry! Now it’s the time to try making my tasty version of this soup.

The only timely process is the roasting or baking of the butternut squash. The process is worth your time since the soup goodness comes from the caramelization process. And a bonus for roasting the squash in the oven is the beautiful aromas that will fill your kitchen.

The ingredients added in this soup create a balanced flavour that will delight your taste buds. The baked garlic brings a deep sweet flavour to the table, while the lemon thyme balances the overall sweetness with its lemony citrus notes. The sweet smoked paprika adds a subtle smokiness,  also deepening the already bright orange colour of the squash.

Steps? Easy. Clean, cut, season, roast, blend. The soup is ready before you know it. You should definitely make a big batch so you can have leftovers. You’ll want the leftover soup, trust me. My favourite way to top it up is with roasted pine nuts or pumpkin seeds. If I serve it as a meal, for lunch, for example, I like to toast some bread on the side. Yummy all the way.

The soup is very filling since the butternut squash is a starchy vegetable, but it’s also nutritious and nourishing. You can easily make it your main dish for lunch or supper. It’s packed with goodness!
