I’m a huge zucchini fan, and I know that some people have an acquired taste for this veggie, so hear me out.

I have friends who don’t prefer zucchini due to their soft texture after cooking, so to them, that’s a big ‘no.’ But, switching from cooked zucchini to raw, that’s a different story.

The biggest tip that I can give you for this soup to succeed is the use of fresh dill. I insist that you use fresh dill versus dried. The soup won’t be as aromatic and dense in flavour without the fresh herbs. I promise you; it’s worth it.

A second tip for a super-hot summer day is if you want this soup served really cold, you can add a few ice cubs inside when serving. Add the toppings you love the most and enjoy to the max.
