Everyone loves pumpkin spice lattes. Or, no? :) It's the perfect time of the year to indulge in pumpkin spice goodies.

Anyhow, I'm super excited about the way these donuts turned out. When people hear gluten-free, they make a silly face. Yes, I used to make it too! Thoughts that fly in one's heads are 'Cardboard tasting food'. Who would want a dessert tasting like cardboard? We all want fluffy bakes, soft and moist, bursting of flavour.

This is that friends. My gluten-free donuts are fluffy and soft and full of flavour.

Pumpkin puree is around in stores, so it's the perfect time to make these donuts. Find a good brand that is sugar-free (if possible), and organic.

 If you don't have oat flour in your pantry, get yourselves some old-fashioned oats and grind them in your food processor until they turn into a fine powder. Add the necessary amount to the batter and keep the leftovers, if any. So quick and easy!

When it comes to maple syrup, I personally use the best organic brand (in my opinion) that I can find on the market. I'm super lucky and excited to have access to such quality ingredients. I know that not all parts of the world have access to certain ingredients. Let me know if that's the case, and I'll help you find an alternative.

 You can easily replace the maple syrup with agave nectar, or honey (not vegan), coconut sugar, or any other unrefined sugar options you can find in your area.

The process is easy peasy. You need to mix all dry ingredients first, then add the wet ones and mix some more. Simple as that. Adding the cake batter to the donut-shaped baking forms is the only challenging part since you need to make sure they come out nice and round. You can use an icing bag to make it easier, or a plastic bag and cut one of the corners to push the batter through.

Can we talk about the glaze now? Yes, the glaze! It's a beautiful light orange glaze, slightly sweet with a pumpkin spice kick, and so smooth and silky to the touch. Just wait until you'll taste test a donut and take your first bite. Close your eyes, and savour that first bite. It's that good, friends! Your family or friends will be delighted to taste such a lovely vegan and gluten-free dessert. If you don't tell them, they won't even be able to tell it's vegan and gluten-free. Shhh! Keep the secret. :)
