Do not back out on me, all right? Hold on for a second. Quinoa is a superfood, yes, and it’s been raved about for years and years for a good reason. You just have to give it a chance and pay a bit of attention to the cooking method. It’s all in the prep and cooking method, my friends. And the secret is quite simple. It’s about the rinsing of this amazing grain, and pre-soaking method before cooking. In the recipe card today, I’ve included the necessary details on how to achieve well-cooked quinoa. Can I tell you why I choose to make this cake for the blog anniversary? Well, I’ve been craving Reese’s cups for a while now. I’m not kidding. I mean serious cravings. The soft peanut buttery interior, and the chocolaty goodness. It would have been easier to just go buy them, one would say. However, I’m sticking to my nutritional values, and I preferred to create my own cake version of Reese’s cups but in a healthy version. And so I did.

The interior of this cake is chocolate heaven, my friends. It has the fudgy texture and richness that I was looking for, but also the dark chocolate-like taste that’s complimenting the smooth, salty peanut buttery frosting. I really think that it can’t get better than that. One bite and you’re sold!

The peanut butter frosting is a breeze to make. Three healthy ingredients that will give you the richest, smoothest frosting you can have. I decided to go for peanut butter powder instead of the classic peanut butter spread. The best kind, of course! Given that the cake is already rich in quinoa protein, adding the powder version cuts down on calories, and it has less fat instead of the regular peanut butter.

Plus, it gives the frosting a fluffier texture. You’ll be surprised! Look for an excellent organic and gluten-free brand, and you won’t be sorry. You can use it in baking and smoothies regularly. If you have a peanut butter addiction as I do, the powder version is a welcome change. :)
