When is the last time you had a nutmeg salad dressing? Exactly! Discovering new flavours that bring out the best in a dish is just the best.

With summer approaching, my brain is spinning a thousand miles a minute with all these fresh recipes that I want to create. I’m so looking forward to it. 

This lovely salad came to be on a sunny weekend day in March, when I was in a mood for a fresh yet straightforward salad but wanting to experiment and try a new spice that would uplift the entire dish.

And this is how the nutmeg made into my dressing. Nutmeg is a fall-winter spice, and it goes well added to squash and zucchini. It’s quite a strong spice, so just a touch of nutmeg makes a dish mightily flavoursome.

When planning this salad, I suggest you find locally grown organic zucchini. You can’t always find freshly grown zucchini, but there is a variety of squash on the market available all year long. Wash the zucchinis thoroughly, wipe them dry, and then peel with the skin on.

As you may have noticed, I like my ‘conversations’ with you here on the blog, so I’m asking you ‘Have you ever tried to bite a piece of raw zucchini or squash?’ Yes, you can eat them raw. When cooked the texture gets quite soft and mushy, but fresh bites are the best in my opinion: crunchy outside, soft inside with sweet and very slight bitter notes.

We’re not moving on without acknowledging the next phenomenal veggie in my salad - the asparagus. Stop and take a peek a the photo below. Stunning vegetable!

It was no brainier that besides the zucchini I needed another star veggie featured in this salad. Can you tell that I’m a vegetable-loving cook? I can’t restrain from describing them and the ways they can elevate a plant-based dish.

You don’t need much asparagus in a dish to elevate it. It takes just a few moderately cooked spears to uncover its undertones of garlic and the slight crunch.
